I love the idea of waffles for breakfast. They are simultaneously light and crunchy, with lots of pockets to hold butter and warm maple syrup. Whenever I travel, one of the first orders of business at the hotel is to head to the breakfast area to see if there is a flip-type waffle maker.

As much as I love waffles, I rarely used to make them. On a weekday, I did not have time for all the mixing, beating of egg whites, folding and baking of the waffles. On the weekends, I didn’t want the hassle and mess either. So my waffle iron gathered dust in the back of the cupboard.

All that changed, however, when I came across a yeasted waffle recipe developed by Marion Cunningham and published in Cook’s Illustrated magazine. Not only was this recipe easier than others, it could be mixed quickly the night before, and the only thing I needed to do in the morning was plug in the waffle maker and give the batter a quick stir. This recipe solved all of my waffle problems and tasted better than regular waffles to boot.

I did make a few changes to the recipe. It was fairly simple in the beginning, but it required three bowls and extra steps that I found unnecessary. So I tinkered with the recipe, streamlining the process and tweaking the ingredients until I was satisfied.

You can start this recipe in the evening and stick in the fridge until any time the next day. I wouldn’t keep the batter for longer than 24 hours, though, because the flavor and texture will both deteriorate. The good news is that you can freeze any leftover waffles for up to two weeks and reheat them into the toaster oven for a delicious, quick and easy weekday breakfast.

Overnight Waffles Makes 8 4-inch Belgian or 12 4-inch regular waffles 1 3/4 cups buttermilk or regular milk 8 tablespoons unsalted butter, cut into 8 pieces 2 cups (10 ounces) unbleached all-purpose flour 1 tablespoon granulated or brown sugar 1 tablespoon malted milk powder (optional) 1 teaspoon table salt 1 1/2 teaspoons instant yeast, or 1 package active dry yeast 2 large eggs 1 teaspoon vanilla extract

MELT the butter in a medium bowl in the microwave. WHISK in the milk or buttermilk. MICROWAVE butter/milk mixture for 30 seconds or until lukewarm. (If using active dry yeast, stir into warm milk mixture.) Whisk in the eggs and vanilla. WHISK in a large bowl to combine the flour, sugar, malted milk powder (if using), salt and instant yeast. Gradually whisk warm milk mixture into the flour mixture; continue to whisk until batter is smooth. SCRAPE down sides of bowl with rubber spatula; cover bowl with plastic wrap, and refrigerate at least 12 hours and up to 24 hours. HEAT waffle iron, following manufacturers instructions. REMOVE waffle batter from refrigerator when waffle iron is hot (batter will be bubbly and will have nearly doubled in size)
